The diversity and profusion of
different plant types available to our urban bees perfectly benefits a gourmet
menu, with deeper flavor with more nuances than commercial honey or other
sweeteners. In addition to greater depth
in flavor, local honey provides many health benefits, including improved
immunity to seasonal allergies.
We raise our bees locally
and harvest and finish the honey by hand.
We strain the honey to remove bits of wax and propolis, which provides a
pleasing look and texture. The straining
process preserves the beneficial pollens and other micro-nutrients which can be
lost with further processing. Additionally, we don’t use any synthetic
chemicals to treat our hives.
Our limited production honey
is seasonal. Flavor and color changes
with each harvest, depending on which plants have been in bloom and the level
of rainfall. Spring honey is often very
light in color with a floral aroma, while autumn honey can be the color of
India Pale Ale with a concentrated flavor.
